Twice Baked Potatoes

Cut baked potatoes in half and scoop the potato-y part out of skin. Smash and add as much of the following as you like (Well, be reasonable. Don't go super crazy.):

Cottage cheese

Sour cream

Cheese

Chopped onions

Spices

Mix it up and mound back into the potato skins. Top with cheese, bacon crumbles. etc.

Bake at 425 until a little golden.

Top with chives if you have them because they are delicious.
